Gourmet camping breakfast: Fig and honey toast

If anyone knows how to turn a camping meal into a delicious gourmet affair, it’s Sarah Glover. Tassie-born Glover set up Bondi Bikkies before heading to NY to partner with a restaurant in Brooklyn, but knowing that her joy came from travel, adventure and cooking with mates, she now spends most of her time doing just that. Over the last two years she travelled and camped across 17 different locations compiling recipes for her cookbook, WILD, which is filled with uncomplicated, yet delicious recipes that challenge your idea of camping food.
Here, she shares her recipe for fig and honey toast – a tasty, gourmet camping breakfast, that would give any Sydney cafe a run for it’s money.
Surf Rider fig and honey toast
FEEDS: 4
INGREDIENTS:
Extra virgin olive oil
1 loaf crusty bread
3 tablespoons sesame seeds (preferably a mix of black and white)
3 tablespoons pepitas and sunflower seeds
1/2 cup honey250 g fresh ricotta
3 tablespoons fig jam
6 fresh figs, sliced
EQUIPMENT:
Traeger Ranger portable pellet grill
METHOD:
1: Heat your Traeger Grill to 160∞C as per the instructions. Cut the bread into thick slices and drizzle over a little extra virgin olive oil. Place on the grill and let it toast and get some smoked goodness into it. Remove and set aside.
2: Meanwhile, put the seeds in a bowl, drizzle the honey over the top and mix them all together.
3: Scoop the ricotta onto a plate and arrange the jam and figs on and around it. Drizzle the honey seeds over the top and serve with the hot toast.
