Garlic and oregano chicken skewers with watermelon salad

A tasty meal in under 10 minutes? We’re sold. This simple, easy dinner is just as tasty as it looks. And, it works a treat for when you have mates over too. “This is a great dinner party option as you can pre-make all items and serve when your guests arrive,” says Rachael.

 

SERVES: 2

TIME: 10 MINS

INGREDIENTS

Chicken:

300g Chicken breast cut into 2cm cubes

2 Clove/s garlic finely chopped

2 tsp Dried oregano

½ Lemon juice and zest

Salt & pepper to taste

Bamboo skewers soaked in water

Watermelon salad:

150g Watermelon cut into small triangles

½ Bunch fresh mint roughly torn

¼ Red onion thinly sliced

50g Feta crumbled

50g Black olives

2 tsp Extra virgin olive oil

1 Lemon squeezed


METHOD

1.     Combine chicken in a bowl with garlic, oregano, lemon rind, lemon juice and oil. Mix well and season to taste. Thread chicken onto skewers.

2.     Heat grill pan over medium-high heat and grill skewers, turning occasionally until cooked through, for around 7-10 minutes.

3.     Meanwhile, combine salad ingredients in a bowl, season to taste and swerves with chicken.
